Farmers’ Market Pasta Salad

Wish I take credit for the beautiful spinach and arugula that I used in this recipe, but no — I picked them up at the farmers’ market in town. Either way, this salad was so delicious that I needed to share.


Farmers’ Market Pasta Salad
Inspired by

  • 3 cups fresh spinach
  • 3 cups arugula
  • 1 cup shelled edamame
  • 1 Portuguese sausage
  • 1 tablespoon minced garlic
  • 1/4 cup Parmesean cheese
  • 8 oz rotini (or similar) pasta
  • 1/4 cup olive oil
  • A squeeze of lemon juice
  • Salt and pepper

Prepare pasta al dente according to package directions. Dice sausage into chunks and cook for a few minutes on the stove.

Meanwhile, we can

make the dressing. Mix the olive oil, lemon, and garlic in a mason jar, then shake it up.

Rinse your veggies. Once the pasta and sausage are done, toss everything with the dressing. Add salt and pepper to taste.
